Crockpot Ham and Potato Soup from Upstate Ramblings

Here in Ohio, the weather has turned cold and what could be better for dinner on a dark, cold night than soup?  

I made the Crockpot Ham & Potato Soup from Upstate Ramblings and it was fantastic so I wanted to share.

Of course, a Santini cannot follow a recipe.  😀  My husband says recipes are guidelines.  He says the same thing about speed limits, too, but we won't go there.

Instead of peeling and dicing potatoes, I used a standard size bag of frozen diced potatoes. I did the same
thing with the onions, using a half bag of frozen diced onions.  Leftover ham would be great but I didn't have any so I used a package of diced ham.  I believe you can find the diced ham near the lunch meat at Kroger (it's been a long time since I've had to grocery shop).  I used one carton of chicken stock with 1 cup of water an a bouillon cube.  Finally, I used half and half instead of heavy whipping cream.

I made Cheddar Bay biscuits using the Red Lobster at home mix (available on Amazon but I think Jon got ours at Sam's Club). The biscuits paired beautifully with the soup since there is cheddar cheese in the soup.  I used one 2 cup bag of cheese to cover both the soup and the biscuits.

This soup makes great leftovers and tastes as great a day or two later as it did the first.  When I ran out of biscuits, I paired the soup with mini oyster crackers that we had in the pantry.
